Ok so I took off the stock fan off my X1800XT and want to put it back on. Could I just use thermal grease for the parts that go on the VGA RAM? I think originally there was thermal tape put on there but since I took it off, I can't stick it back on. Same question for RAM heatsinks that are bought elsewhere.

You can't use thermal grease on the ram .. the ram chips are not level and the tape is used to compensate for that. I would just go buy a Zalman VF900 (comes with ram sinks) and be done with it.

You will need to get thermal tape and new grease to remount the stock heatsink otherwise.
