I'm taking the plunge to AM2, but I see that PC-8000 is almost double the price of 6400. Is the performance difference that large?

Heck no... get 6400 and save your money. I've used a few PC2-6400 kits that have *easily* overclocked to PC2-8000 speeds.

I have not used the OCZ, but I believe it overclocks pretty well. I have overclocked both the ST and Corsair modules to PC2-8000 speeds with 4-4-4 timings.

I am unsure what chips those use, but G. Skill has been proving some great overclocks lately.

Just be warned, that since they are 4-5-4 timings, I am unsure that they will OC to a full PC2-8000. Generally though, tighter timings make a larger difference than higher MHz at that point. I have also not used any DDR2 on AM2 yet, so it's hard to say how well they will OC there.
Be sure to post some performance reports! :)

I won't be overclocking RAM hugely, maybe not at all. Probably just enough to get a good divider.
